How is the caloric value of Truvía® Baking Blend calculated? [Link]

Truvía® Baking Blend is a combination of Truvía® Calorie-Free Sweetener and sugar. Health Canada has established a set of regulations for disclosing calories on the Nutrition Facts table for consumer food products. These nutrition labeling regulations may be found in Section B.01.401 of Canada’s Food and Drug Regulations. Health Canada’s requirements for calorie disclosure are as follows: less than 5 calories may be expressed as zero if the product meets requirements of “free of energy” claim, or to the nearest multiple of 1 calorie; less than or equal to 50 calories is expressed to the nearest multiple of 5 calories; greater than 50 calories is expressed to the nearest multiple of 10 calories. In the case of ½ tsp Truvía® Baking Blend (combination of Truvía® Calorie-Free Sweetener and sugar) the analytical caloric value is less than 5 calories per serving. However, the caloric value is rounded up to 5 calories since Truvía® Baking Blend is not a calorie-free food and consumers expect a caloric value on the label (product is a combination of Truvía® sweetener and sugar).

Does Truvía® Baking Blend have carbohydrates (calories)? [Link]

Truvía® Baking Blend contains 1 gram of sugar (carbohydrate) per ½ teaspoon. The other ingredients of Truvía® Baking Blend include stevia leaf extract, which does not contain usable carbohydrates, and erythritol, which has a very low digestible energy value of 0.2 calories per gram (unlike sugar, which provides 4 calories per gram). Truvía® Baking Blend contains erythritol, which has a different absorption and metabolic profile than other sugar alcohols, and as a result, has no effect on blood sugar or insulin. For the purposes of food labeling, erythritol appears on the label as a carbohydrate, but there are virtually no calories in erythritol. However, the amount of Truvía® Baking Blend used in your recipes and the amount of sugar it provides to a serving of your recipe should be considered as you count carbohydrates.

Does Truvía® Baking Blend impact blood sugar? [Link]

Truvía® Baking Blend contains less than 1 gram of sugar per ½ teaspoon. The amount of Truvía® Baking Blend used and the amount of sugar it provides to a serving in your recipe should be considered as you manage your blood sugar. The other ingredients of Truvía® Baking Blend (stevia leaf extract and erythritol) do not increase blood sugar. Studies conducted with stevia leaf extract and erythritol in people with diabetes have shown that these ingredients have little to no effect on blood sugar. It is important to note that Truvía® Baking Blend does contain sugar, and other ingredients in the foods to which it is added may also provide additional calories and carbohydrates. People with diabetes need to count these calories and carbohydrates when planning their meals.

How do I replace the volume of sugar in my recipe when using Truvía® Baking Blend? [Link]

In most recipes, Truvía® Baking Blend will provide great results simply by replacing all of the sugar that is called for with half the amount of Truvía® Baking Blend. You do not need to modify anything else in your recipe. In case your recipe does not turn out as well as you would like, check out the following tips: Include or add baking soda to your baked good recipes (especially cakes and muffins) when replacing sugar with Truvía® Baking Blend to increase volume and browning. Generally ¼ to ½ teaspoon will be sufficient. When you replace the sugar in your recipe, you also lose bulk. Therefore, your final yield might be slightly less when using Truvía® Baking Blend. To compensate, you can also use a slightly smaller pan, such as an 8-inch (20-cm) round in place of a 9-inch (23-cm) round when making a layer cake. Replacing all or a portion of the shortening or butter with vegetable oil in recipes, not only reduces saturated fat, but will also increase the volume of cakes and muffins made with Truvía® Baking Blend.
