Ingredients

  • 2 lbs. sweet potatoes, peeled and cut into cubes

  • 1 lb. mashed sweet plantains or bananas

  • 1 stick (14 lb.) of unsalted butter

  • 1 grapefruit, zested and juiced

  • 12 (125 mL) to 1 cup (250 mL) low-sodium chicken stock

  • 1 cup (250 mL) vanilla almond milk*

  • 14 cup (50 mL) Truvía® calorie-free sweetener spoonable**

  • 12 tsp (2.5 mL) grated nutmeg

  • 12 tsp (2.5 mL) of cinnamon

  • Salt and freshly ground pepper to taste

*or 1 cup (250 mL) skim milk plus 12 tsp (2.5 mL) vanilla extract
**or 14 packets Truvía® calorie-free sweetener

Directions

  • 1.

    Boil potatoes until tender, drain, and keep to the side.

  • 2.

    Return the pot to the burner over medium heat. Add butter and plantains to the pot and cook for about 5 minutes.

  • 3.

    Add the juice of 1 grapefruit to the pot. Save the zest.

  • 4.

    Add sweet potatoes, 12 cup chicken stock, almond milk and Truvía® calorie-free sweetener to the pot. Mash together until well combined. Add remaining 12 cup chicken stock in small increments to desired consistency.

  • 5.

    Season with nutmeg, cinnamon, salt, pepper and grapefruit zest to your taste.

*These potatoes have 200 calories and 9 grams of sugar per serving compared to the regular sugar-sweetened version which have 220 calories and 17 grams of sugar.
