Sweet Potato Casserole Recipe with Truvia® Brown Sugar Blend and Truvia® Cane Sugar Blend

Filling

  • 6 cups cubed sweet potatoes

  • 12 cup Truvía® Cane Sugar Blend

  • 12 tea salt

  • 1 tea vanilla

  • 2 eggs

  • 14 cup butter

Topping

  • 12 cup Truvía® Brown Sugar Blend

  • 13 cup flour

  • 12 cup chopped pecans

  • 18 cup melted butter

Directions

  • 1.

    Preheat oven to 350º F and spray a 9x13 baking dish with cooking spray.

  • 2.

    Bring 2 quarts of water to a boil in a large pot over medium heat.

  • 3.

    Once the water is boiling, add sweet potatoes cubes and cover.

  • 4.

    Allow the potatoes to boil until tender, about 30 minutes.

  • 5.

    Add butter, Truvía® Cane Sugar Blend, salt, vanilla and mix well.

  • 7.

    Whisk eggs in a small bowl, than gradually add to mashed sweet potatoes.

    Pour mixture into prepared dish.

    For topping, combine all the ingredients in a mixing bowl.

    Sprinkle the topping evenly over the top on the sweet potato mixture to make a nice crust.

    Bake for 30 minutes.

    Allow to set at least 10 minutes before serving.

    Cover and refrigerate any leftovers
