Chocolate Cherry Zoats with Truvía® Calorie-Free Sweetener

½ cup (125 mL) washed, finely shredded zucchini
½ cup (125 mL) old fashioned oats
1 cup (250 mL) unsweetened vanilla almond milk
½ cup (125 mL) frozen tart cherries, defrosted and cut into ¼ pieces
½ tablespoon (7.5 mL) unsweetened cocoa powder
1–1⁄2 teaspoon (7.5 mL) Truvía® Calorie-Free Sweetener
¼ teaspoon (1.25 mL) vanilla extract
1⁄8 teaspoon (3⁄4 mL) almond extract
1⁄8 teaspoon (3⁄4 mL) sea salt
1⁄2 tablespoon (7.5 mL) dark chocolate chunks
Directions

Chop the shredded zucchini very finely if you’d like it relatively undetectable.
- 2.
Place it in a lint free kitchen towel, and twist it to remove as much moisture as possible.
- 3.
Transfer the drained zucchini to a small saucepan.
- 4.
Add the oats and mix them together.
- 5.
Pour the almond milk into the pan and cook them on medium heat.
- 6.
Using a rubber spatula or wooden spoon, stir the mixture frequently until the moisture has evaporated, about 4 – 7 minutes on a gas burner – longer on an electric.
- 7.
Remove the pan from the heat.
- 8.
Stir in the cherries, cocoa powder, Truvía® Calorie-Free Sweetener, vanilla extract, almond extract, and salt until well combined.
- 9.
Add the chocolate chunks and stir them so they just soften – don’t completely melt them.
- 10.
Enjoy immediately, refrigerate any leftovers.
