Cranberry Orange Muffins with Truvía® Cane Sugar Blend

Ingredients

  • 2 cups (500 mL) all-purpose flour, sifted

  • 112 tsp (7.5 mL) baking powder

  • 12 tsp (2.5 mL) salt

  • 12 tsp (2.5 mL) baking soda

  • 12 cup (125 mL) unsalted butter, melted and cooled

  • 13 cup (75 mL) Truvía® Cane Sugar Blend

  • 1 Tbsp (15 mL) orange zest

  • 12 cup (125 mL) orange juice

  • 2 eggs

  • 1 tsp (5 mL)vanilla extract

  • 12 cup (125 mL) skim milk

  • 112 cups (375 mL) cranberries (fresh or frozen), chopped

Directions

  • 1.

    Preheat oven to 375° F (190° C).

  • 2.

    Prepare muffin tin by greasing cups or use paper liners.

  • 3.

    In a large bowl, add flour, baking powder, salt and baking soda. Mix together with a fork.

  • 4.

    In a separate bowl, whisk together butter, Truvía® Cane Sugar Blend, orange zest and juice, eggs, vanilla and milk.

  • 5.

    Stir the wet mixture into the flour mixture until just combined.

  • 6.

    Fold in chopped cranberries.

  • 7.

    Fill each muffin cup about 34 full.

  • 8.

    Bake until golden and a toothpick comes out clean (20–25 minutes).

  • 9.

    Cool muffins in pan for 5 minutes, then remove to a wire rack and cool completely.

*This muffin has 190 calories and 4 grams of sugar per serving as compared to the full-sugar version that has 210 calories and 13 grams of sugar per serving.
