Cranberry Pistachio Biscotti with Truvía® Cane Sugar Blend

The red and green color from cranberries and pistachios in these delicious biscotti makes for a festive treat this holiday season. Made with Truvía® Cane Sugar Blend, these biscotti have 14% fewer calories* and 55% less sugar* than the full-sugar version. Makes 2 dozen biscotti.

  • 14 cup (50 mL) light olive oil

  • 14 cup (50 mL) + 2 Tbsp (30 mL) Truvía® Cane Sugar Blend

  • 2 tsp (10 mL) vanilla extract

  • 12 tsp (2.5 mL) almond extract

  • 2 eggs

  • 134 cups (425 mL) all-purpose flour

  • 14 tsp (1.25 mL)salt

  • 1 tsp (5 mL) baking powder

  • 12 cup (125 mL) dried cranberries

  • 112 cups (375 mL) pistachio nuts


  • 1.

    Preheat the oven to 300° F (150° C).

  • 2.

    Mix the oil and Truvía® Cane Sugar Blend in a large bowl. Mix in the vanilla and almond extracts, and then beat in the eggs.

    Combine flour, salt, and baking powder in a separate bowl. Gradually stir the flour mixture into the egg mixture. Mix in cranberries and nuts by hand.

  • 4.

    Divide dough in half. Form two logs (8x4 inches) on a cookie sheet that has been lined with parchment paper. Wet hands with cool water to handle the dough more easily.

  • 5.

    Bake for 35 minutes, or until logs are light brown. Remove from oven, and set aside to cool for 10 minutes. Reduce oven to 275° F (140° C).

  • 6.

    Cut logs into 12 inch thick slices using a pizza cutter. Lay on sides on parchment covered cookie sheet. Bake approximately 8 minutes, or until dry; cool.

*These biscotti have 120 calories and 4 grams of sugar per serving as compared to the full-sugar version that have 140 calories and 9 grams of sugar per serving.
