Lemon Bars Recipe with Truvia Cane Sugar Blend

Ingredients

Crust

  • Refrigerated pie crust dough

Filling

  • 6 large eggs**

  • 1 cup (240 mL) Truvia Cane Sugar Blend

  • 2 Tbsp (30 mL) cornstarch

  • 3 tsp (15 mL) finely grated lemon peel

  • 12 cup (120 mL) fresh lemon juice

Topping

  • 1 tsp (5 mL) powder sugar (Optional)

Directions

Crust
  • 1.

    Preheat oven to 230°C.

  • 2.

    Remove crust from package.

  • 3.

    Press into bottom of 9-inch square baking pan.

  • 4.

    Fold over edges to make sides.

  • 5.

    Bake 20-25 minutes, or until golden brown.

  • 6.

    Cool completely on wire rack.

Filling
  • 7.

    Turn oven down to 175°C.

  • 8.

    Whisk eggs until blended.

  • 9.

    Whisk in Truvia Cane Sugar Blend, starch and lemon peel until blended.

  • 10.

    Whisk in lemon juice.

  • 11.

    Pour mix into a cool crust.

  • 12.

    Bake for 35-45 minutes or until just set in center, test with pick.

  • 13.

    Cool completely on wire rack.

  • 14.

    Optional: dust top with a ½ tsp (3 mL) of powder sugar through a strainer.

  • 15.

    Refrigerate any leftovers.
