1 cup (240mL) + 2 Tbsp (30mL) Truvia Sweet Complete Granulated All-Purpose Sweetener
1 cup (240mL) cake flour
1 Tbsp (15mL) baking powder
¼ cup (60mL) instant mashed potato flakes
10 Tbsp (150mL) butter, softened
2 eggs**
2 egg yolk
3⁄4 cup (180mL) skim milk
1⁄2 tsp (3mL) vanilla extract
Directions
- 1.
Preheat oven to 175° C (350° F). Grease and lightly flour 2 nine-inch pans or a 9" x 13" pan.

Combine dry ingredients in a large bowl and mix.
- 3.
Add butter to dry ingredients and mix on low speed for 1–2 minutes.
- 4.
Add 1 egg, mix for 30 seconds at low speed and 1 minute at medium speed. Scrape bowl and repeat with rest of eggs and yolks until well blended.
- 5.
Slowly add milk and vanilla extract, mix for 1 minute at low speed then 1 minute at medium speed.
- 6.
Bake 9" pans for 26-28 minutes (slightly longer for 9" x 13" pan) just to the point when a pick comes out clean.
- 7.
Cool for at least 15 minutes before removing from pan.
- 8.
Add frosting or topping if desired.
- 9.
Store leftover in a sealed container.
Topping Suggestion:
- Try with Chocolate Buttercream Frosting.
