Ingredients

MUFFINS

  • 2 large mashed bananas

  • 14 tsp (1.25 mL) melted butter

  • 14 tsp (1.25 mL) salt

  • 12 tsp (2.5 mL) baking powder

  • 12 tsp (2.5 mL) baking soda

  • 1 egg

  • 2 Tbsp (30 mL) Truvia® Cane Sugar Blend

  • 1 cup (250 mL) all-purpose flour

CRUMB TOPPING

  • 2 Tbsp (30 mL) all-purpose flour

  • 2 Tbsp (30 mL) rolled oats

  • 14 cup (60 mL) walnuts

  • 3 Tbsp (45 mL) softened butter

  • 2 Tbsp (30 mL) Truvia® Brown Sugar Blend

Directions

  • 1.

    Preheat oven to 350°F (175°C)

  • 2.

    To make the crumb topping, combine the flour, oats, walnuts, softened butter, and Truvía® Brown Sugar Blend in a medium bowl. Stir together until crumb consistency and set aside.

  • 3.

    To make the muffins, mash bananas and place in a separate bowl along with melted butter, salt, baking powder, baking soda, egg, Truvía® Cane Sugar Blend, and flour. Use hand mixer to combine until thickened.

  • 4.

    Spoon muffin batter into liners and add crumb topping.

  • 5.

    Bake 25 minutes at 350°F (175°C).
