Caramel Cookie Bars with Truvía® Brown Sugar Blend

Made with chocolate chips, walnuts and caramels, these scrumptious bars combine a variety of sweets into one tasty treat. These bars, created by April Athena of CookWithApril, have 4% fewer calories* and 42% less sugar* than the regular brown sugar version of this recipe. Makes 20 bars.

Ingredients

  • 20 wrapped caramels

  • 5 Tbsp. (75mL) heavy cream

  • 1 14 (310 mL) cup flour

  • 1 14 cup (310 mL) rolled oats

  • 12 cup Truvía® Brown Sugar Blend

  • 12 tsp. (2.5 mL) baking soda

  • 14 tsp. (1.25 mL) salt

  • 1 cup (250 mL) melted butter

  • 12 cup chocolate chips

  • 12 cup chopped walnuts

Directions

  • 1.

    Preheat oven to 350°F (175°C). Place caramels and heavy cream into a medium saucepan on low heat. Stir until melted and set aside.

  • 2.

    In a large bowl, combine flour, oats, Truvía® Brown Sugar Blend, soda and salt, then mix. Add softened butter then use hand mixer to combine further. Place half of the mixture in 9” x 13” pan and press it down. Bake at 350°F for 8 minutes.

  • 3.

    Remove from oven and add chocolate chips and walnuts. Next, pour caramel sauce on top, followed by remaining oat mixture and press down.

  • 4.

    Bake at 350°F (175°C) for 12 minutes.

*These bars have 210 calories and 8 grams of sugar per serving compared to the regular brown sugar-sweetened version which have 220 calories and 14 grams of sugar.
