Ingredients

GINGER CONCENTRATE

  • 1 lb fresh ginger, washed, roughly peeled and chopped into 1-inch chunks

  • 2 cups (475 mL) water

  • 1 cup (240 mL) freshly squeezed lime juice

  • 14 cup (60 mL) of Truvia Calorie-Free Sweetener

Mojito

  • 2 oz. Truvia Calorie-Free Sweetener ginger concentrate

  • 8 oz. club soda

  • 1 tsp (5 mL) imitation rum extract

  • 1 Tbsp (15 mL) mint, washed and diced

Directions

GINGER CONCENTRATE
  • 1.

    In a blender or food processor, liquefy the ginger and 1 cup (240 mL) of water for 3 minutes.

  • 2.

    Using a small strain drain the juice into a bowl.

  • 3.

    Transfer the ginger pulp back to the blender or food processor, add another ½ cup (120 mL) of water and liquefy again.

  • 4.

    Strain again, adding the liquid to the first batch.

  • 5.

    Again, transfer the pulp along with another ½ cup (120 mL) water and liquefy again.

  • 6.

    Strain again, and add to the collected liquid.

  • 7.

    Press the solids with the back of a big spoon to squeeze out as much of the juice as you can.

  • 8.

    Discard the mashed solids and rinse out your blender/food processor.

  • 9.

    Pour the liquid into the blender/food processor.

  • 10.

    Pour in the lime juice and Truvia Calorie-Free Sweetener. Blend for 30 seconds.

  • 11.

    Store leftovers refrigerator in a sealed container.

Mojito
  • 12.

    Mash mint into the bottom of a glass with a spoon.

  • 13.

    Add 2 oz. of Truvia Calorie-Free Sweetener Ginger Concentrate into a glass along with about 8 ounces of club soda.

  • 14.

    Add the rum extract and ice.

  • 15.

    Mix well.

  • 16.

    Store leftovers refrigerator in a sealed container.
